Another dispatch from the Snap Test Kitchen: deep fried NY state cheese curds. Back in the Midwest, we looove our cheese curds. Really good ones from roadside stands and farmers markets squeak when you bite ‘em. That’s the test of fresh curds.
The only then better than fresh-from-the-farm cheese curds are taking those curds and deep frying them. It’s high time Snap brings this down home delicacy to NYC. We’ve sourced cheddar curds from Golden Age Cheese in Woodhull, NY and are currently testing out recipes to add these to our fry menu this summer.
